To make this second dish you need excellent veal , chosen from the cuts of veal , otherwise known also by the name of girello . Often in the South this cut is called lacerto.
After cooking the piece of meat, it is cut into thin slices and seasoned with a special sauce, the tuna sauce , prepared with crumbled hard-boiled eggs, drained tuna, some anchovy fillets and a handful of capers.
